Refined Sugar Free Banana Bread!

Everyone loves Banana Bread (well everyone I know), and what I love about it is that you can easily remove the refined sugars and enjoy a naturally sweet treat! Brown, spotty banana's are the best for this - adding that sweet and caramel like flavour we all love.. This recipe can either be purely sweetened by banana's - or you can add a touch of honey for the sweet-tooth's! The recipe below makes two loaves.

Ingredients:

  • 125 g butter melted
  • very ripe bananas mashed
  • 2 cups LSA 
  • ½ cup flour (plain or gluten-free)
  • 1 level teaspoon baking soda
  • good pinch salt
  • 3 eggs whisked
  • 1tbs Honey (optional)
  • 1 banana to garnish (optional)

Method

  • Preheat oven to 180°C. Line two small loaf tins.
  • In a large bowl, mix melted butter, mashed banana, LSA, flour, baking soda, honey (if using), salt and eggs. Stir until combined.
  • Spoon mixture into prepared loaf tins, dividing equally. Cut another banana (if using) in half lengthways and arrange a banana half on top of each loaf. 
  • Bake for 35-40 minutes or until loaves are golden and a skewer inserted into the centre comes out clean.
  • Leave loaves to cool in tins for 5-10 minutes before removing and transferring to a wire rack. Store in an airtight container in a cool, dark place for up to three days. You can also freeze.
