Everyone loves Banana Bread (well everyone I know), and what I love about it is that you can easily remove the refined sugars and enjoy a naturally sweet treat! Brown, spotty banana's are the best for this - adding that sweet and caramel like flavour we all love.. This recipe can either be purely sweetened by banana's - or you can add a touch of honey for the sweet-tooth's! The recipe below makes two loaves.
Ingredients:
- 125 g butter melted
- 3 very ripe bananas mashed
- 2 cups LSA
- ½ cup flour (plain or gluten-free)
- 1 level teaspoon baking soda
- good pinch salt
- 3 eggs whisked
- 1tbs Honey (optional)
- 1 banana to garnish (optional)
Method
-
Preheat oven to 180°C. Line two small loaf tins.
-
In a large bowl, mix melted butter, mashed banana, LSA, flour, baking soda, honey (if using), salt and eggs. Stir until combined.
-
Spoon mixture into prepared loaf tins, dividing equally. Cut another banana (if using) in half lengthways and arrange a banana half on top of each loaf.
-
Bake for 35-40 minutes or until loaves are golden and a skewer inserted into the centre comes out clean.
-
Leave loaves to cool in tins for 5-10 minutes before removing and transferring to a wire rack. Store in an airtight container in a cool, dark place for up to three days. You can also freeze.
Thanks Nadia Lim for the original inspiration! This is our own take on this delish loaf!
