Very Berry Coconut Smoothie Bowl

Not your typical winter treat, but we have been craving something a little more fresh recently, so thought we would bring a touch of summer into our lives with this berry and coconut smoothie bowl! Nothing sets you up for the day quite like a nutritious smoothie bowl - packed full of vitamins that are sure to kick those winter bugs to the curb!

Ingredients

  • 1 cup mixed berries (strawberries, blueberries, raspberries, etc.), frozen
  • 1 ripe banana
  • 1/2 cup coconut milk
  • 1/4 cup coconut yogurt (optional for added creaminess)
  • 1 tablespoon honey or maple syrup (optional for added sweetness)
  • Toppings (optional): fresh berries, sliced banana, shredded coconut, granola, chia seeds, or mint leaves

Instructions

  1. In a blender, add the frozen mixed berries, ripe banana, coconut milk, yogurt (if using), and honey or maple syrup (if desired). Blend on high speed until smooth and creamy. If the mixture is too thick, you can add more coconut milk in small increments until you reach the desired consistency.

  2. Once the smoothie mixture is well blended, pour it into a bowl.

  3. Now it's time to add your favorite toppings! You can arrange fresh berries, sliced banana, shredded coconut, granola, chia seeds, or mint leaves on top of the smoothie bowl. Feel free to mix and match toppings according to your preference.

  4. Serve immediately and enjoy your mixed berry and coconut smoothie bowl with a spoon!

Note: If you prefer a colder and thicker smoothie bowl, you can add a handful of ice cubes to the blender along with the other ingredients in step 1.
