It's been a while but we are back!! Kicking it off with a classic recipe, from an incredible cook book. A couple of days ago a lovely lady came into our Ponsonby store selling a quaint little cook book called Nana's Baking. Filled with recipes from Breast Cancer survivors in
Tāmaki Makaurau, with 100% of proceeds going towards Breast Cancer Research at www.onestepforward.co.nz
This morning I was craving something sweet, yet easy to make - So I whipped up a batch of Anzac biscuits (One of the first recipes in the book).
Nana's Anzac Biscuits
Ingredients:
150g Sugar
125g Flour
1 Cup Coconute
100g Butter
1 Cup Rolled Oats
1 Tbsp Honey or Golden Syrup
1/2 tsp Bicarb Soda (dissolved in 2tbsp boiling water)
Method:
1. Mix together the flour, sugar, coconut and rolled oats
2. In a seperate bowl melt the butter and then add the golden syrup/honey.
3. Dissolve the Bicarb Soda an dadd to the butter and syrup. Mix into the dry ingredients.
4. You don't want the mixture to be too wet, so add a little flour if its runny.
5. Place spoonfuls of the dough onto a lined or greased trey. Bake for 15 - 20 mins at 180C, until golden brown.
