Golden, Crispy, Salty, Sweet and Healthy!! What more could you possibly want from a snack. These Crispy bites are super versatile and easy to make, add our Miso Satay and some rice to create a full meal or simply serve alone with your favourite dipping sauce.
Cauliflower and Broccoli Bites
1/2 head of cauliflower and broccoli cut into 2cm florets with stems attached
1 cup of oat milk or (2 eggs beaten with salt, pepper and a dash of water).
2 cups panko crumbs with a pinch of chilli and tad of salt and pepper.
1. Preheat the oven to 180 degrees, fan bake. Dip the florets in the egg wash and then the panko crumbs and repeat to build up a batter.
2. Place on a baking tray and place in the preheated for 15 mins, or until golden brown.
Miso Satay Sauce
2 heaped Tbls peanut butter, we used our favourite Fix and Fog Crunchie
1 Tbs miso paste
1 Tbls Honey
150 mls water
1 clove garlic crushed
1/2 teaspoon chopped chilli
1. Heat all the ingredients on low heat in a pot stirring to avoid sticking until slightly thickened and a light bubble appears.
2. Remove from the heat and serve with your crispy broccoli and cauliflower.
Enjoy!! These are great as a meal themselves served on a bed of leafy greens or as a healthy snack.
